The Mexican regulatory authority for tequila, the&nbsp;<em>Consejo Regulador del Tequila, A.C.<\/em>, strictly stipulates that tequila can only be called tequila if it is made from 100% Weber blue agave, there is one exception, more on that later. In general, spirits made from agave, no matter what kind, are called mezcal, so tequila is a subspecies of mezcal, so to speak, only much more strictly regulated. This blue Weber agave used to grow almost exclusively in the Mexican state of&nbsp;<em>Jalisco<\/em>, near the city of&nbsp;<em>Tequila&nbsp;<\/em>(hence the name). Today, the agave is mainly cultivated in&nbsp;<em>Jalisco<\/em>, but also in&nbsp;<em>Sinaloa, Michocan, Sonora<\/em>&nbsp;and&nbsp;<em>Oaxaca<\/em>&nbsp;for the production of tequila.
